Hotel Adventures: Making Due

Bad news on the house front. Appraisal isn’t happening until Jan 19th. Pushing our closing day to Jan 29th. Not ideal. Not ideal at all.  This news calls for fudge When life calls for fudge, and you don’t have a square pan, you improvise.

 

My daily walks here keep me sane. I love that I can continue walking even when it’s 30 degrees out. In Utah, my lungs would seize up so bad in the cold, it was hard to breathe. It’s amazing what a lower altitude and a little moisture in the air can do.
 
Also, I’m going to be sad when it’s winter and I don’t have to wear a mask. They keep me so warm!
The hero of this adventure has been my instant pot, hands down! This hotel has a kitchen, but is lacking in a stove or oven. They provide you with a hot plate and a small frying pan that will cook one pancake at a time, so it is far from practical, but will work in a pinch. But because of my IP, this is no problem. I’ve cooked cinnamon rolls, pizza, cheesecake, lasagna, a whole turkey breast pastas and casseroles and so much more the past several weeks and it will be taking over for our Christmas dinner as well.
 
And today I was feeling low because I couldn’t bake my usual Christmas goodies but then found a recipe for cooking Chex mix in the IP and I was able to treat myself to my favorite Chex mix recipe, passed down from my grandma Davis, to my dad, and to me and my sister and has been a staple in our house every year.
 
If you are on the edge of whether to get an Instant pot or to gift one to someone this year, I can’t recommend it more. Both Tyler and I love this thing and use it several times a week even when we aren’t living the tiny life.
